Another example involved a brewery, not a particularly high volume brewery, but the uniqueness of the construction of the production equipment within an old building situated within an extremely strict environmental protection zone. This marriage of old buildings and modern equipment with strict environmental discharge constraints created a unique cleaning and waste handling problem. In brewing the cleaning and hygiene requirements are of real concern as the liquid is in contact with the equipment surfaces for longer than most other food processes and the nature of the liquid leaves behind hardwater scale and protein deposits over time. Proper cleaning and sanitisation procedures are absolutely paramount; contamination will often spoil the entire batch.
Our expertise in cleaning and sanitisation procedures were called in to advise the company. By instituting a proper cleaning and sanitisation regime for both the equipment in contact with the liquid and the whole site, with the correct products and equipment, and training to match, the company could now guarantee a reliable product to sell to the customer.
